New Forest Venison was founded with one simple goal — to help more local people enjoy and appreciate New Forest wild venison.

We’re a small team of professionally trained hunters, based mainly in the New Forest. Every one of us is fully qualified, experienced, and insured. We care deeply about the Forest and are committed to making fresh, affordable, sustainably sourced New Forest venison available to everyone.

By responsibly managing the local deer population, we help to restore the balance of the ecosystem — ensuring the New Forest continues to thrive, largely unchanged, for generations to come.

100% New Forest Venison

We are the only supplier that can guarantee all of our venison is sourced exclusively from within the New Forest district council (NFDC) boundary.

Each of our stalkers is audited to ensure they meet the highest standards at every stage — from the cull and carcass extraction, through transportation and refrigeration, to butchering and delivery to you.

To ensure the best possible flavour, we harvest females (does/hinds) and hang our venison for only a short period before butchering. This careful approach produces meat that’s tender, mild, and free from the strong ‘gamey’ flavour sometimes associated with venison.

We’re committed to protecting the biodiversity of the New Forest and educating locals about the impact of unmanaged deer populations. Deer can cause significant damage to trees, rare plants, and wildflowers — so population control is essential for the Forest’s long-term health.

Meet Dan Parsons

I’m Dan Parsons, founder of New Forest Venison. My passion lies in supporting local food, drink, and craft producers. For the past seven years, I’ve had the privilege of serving as Chair of the New Forest Marque (@newforestmarque), a not-for-profit Lymington-based organisation founded in 2004 to support New Forest farmers, Commoners, and other food producers.

In partnership with the New Forest National Park Authority (NFNPA), I was awarded a Farming in Protected Landscapes (FiPL) grant in 2024 to research and improve the New Forest wild venison supply chain — making it more efficient and accessible.

New Forest Venison was founded as a direct result of that work — to bring truly local, responsibly sourced wild venison to your table.
